Home Dishes

If being away from home and living on my own for the first time has taught me anything, it's that I really am, as the saying goes, my father's daughter. I've always enjoyed my dad's food, though never paid a huge amount of attention to how he made them. Now that he's not here to spoil me with his cooking, I've taken it upon myself to create a list of all the dishes I miss from him and home, so that I may re-create them here with at least some level of success. Thank you, Papa! (You too, Mom!) :)
I'll cross out the ones I make, and for those of you who don't get all the Spanish dishes, I'll write a description. Enjoy!


-Milanesa with mashed potatoes from scratch (thin, lightly breaded steak)
-Greek-style pork chops
-Pumpkin Pie
-Shrimp and crab cocktail
-Sopa de papas- (potato soup, with bits of bacon and with red wine vinegar to taste)
-Sopa de fideo- (angel hair noodle soup, topped with parmesan cheese)
-Sopa de col- (cabbage soup, also with bacon bits)
-Egg and crab Benedict, hopefully I can find the hollandaise sauce here..
-Beer marinated carne asada (thin grilled steak) tacos
-Papa's 'Man Spaghetti' as I call it, chock full of chorizo and bacon bits, a vegetarian's nightmare. Made the traditional way first, then places in a pan, drizzled with parmesan and stuck in the oven to bake. Though I don't think it'd be healthy to make this too often...
-Lemon chicken with capers, Bucca de Beppo style
-Corn beef hash and eggs, with potatoe bites
-Salpicon (pulled beef, tossed with parmesan? bits, peas, potato bites, a little chile, though I'll probably be nixing the raw onion slices..you know me, Papa!)
-French baguette sandwiches with ham, a little mayo, refried beans, cheese, and avocado
-Crab dip, made with cream cheese and artichoke hearts
-Chilaquiles (tortillas cut into squares and fried with eggs and either red or green chile sauce)
-Hardboiled egg-filled meatballs in sauce
-Huevos rancheros (1-3 tortillas fried and topped with sunnyside-up egg, refried beans, and Papa's chorizo sauce
-Homemade cream of mushroom
-Homemade cream of aparagus
-Mom's posole rojo (hominy stew with red sauce and pulled pork, stew beef, spices, and cabbage..haven't had this one in forever!)
-Pupusas (best way to describe it- small tortilla pancake filled with your choice of cheese, beans, chorizo or a combo of all three)
-Potstickers/Gyoza, I won't be making them, but I'm gonna try and find them in stores here
-Yakisoba, most people should know, but basically Japanese chow mein
-Flan (even France has it's own version, but an egg and melted sugar custard..Mom style! )
